Real Wedding: Hollow Brook Golf Club

"Chris and I attended high school together in Brewster, New York. He was a junior and I was a freshman. Although we never dated, there was always a chemistry between us.

"Through the years, our lives took separate paths. We would run into each other from time to time and the sparks were still there, but one of us was always unavailable.

"Then, several years ago, at a comedy club in Brewster, Chris walked into the room and sat right across from us. I couldn’t believe my eyes. We went for drinks after the show and learned that we lived only five miles from each other! During this time, he was busy running his business, Imperial Sound & Video, and I was working for an investment company. We began dating and moved in together 11 months later.

"We got engaged the following year while on a cruise to the Carribean. Chris suggested we take a walk to the upper deck. Suddenly, he got down on one knee and asked me to marry him. I was completely stunned and said yes! We celebrated under the moonlight with a glass of champagne. The entire proposal was caught on video, so we can relive it for years to come.

"We wanted to have a small wedding and to hold our ceremony outdoors. We began looking at venues and were impressed by the beautiful grounds and the rustic elegance of Hollow Brook Golf Club. We met Robbyn Scuillo, the event planner, who invited us for dinner. The food was delicious and presented beautifully. We were happy about how flexible our menu options were, and she helped us create a menu within our budget.

"We had a wonderful, gorgeous wedding day. It rained briefly before the ceremony but we were still able to take outdoor photos. My mother-in-law and friend were kind enough to create gorgeous hair and makeup.

"Instead of using floral arrangements, we used lanterns as centerpieces. This tied in with the rustic elegance and the Adirondack feeling of the space. Despite the extremely hot weather, our outdoor cocktail hour on the terrace was gorgeous.

"We had stationary hors d’oeuvres, a pasta station with two choices of sauces, as well as shrimp wrapped in bacon in puffed pastry, skewered beef tenderloin with baby portobello mushrooms, vegetable spring rolls, poached asparagus wrapped in parmesan phyllo, chicken yakitori, and our signature champagne with a raspberry drink.

"The Hollow Brook salad and a lemon intermezzo were served before the main course, when our guests could choose rosemary roasted rib eye with baby green beans and carrots, grilled free range breast of chicken marinated with fresh herbs and baby asparagus, or Atlantic salmon served with sautéed baby spinach. Our cake was a champagne mousse with raspberry filling. It was so delicious.

"We truly had a wonderful wedding day. We really appreciate all the guidance that Robbyn gave us during the planning process. She was always gracious and patient.

"We would like to thank our parents, as we couldn’t have accomplished this day without them and we are eternally grateful. There aren’t enough words to express our gratitude towards our wonderful family and friends who were able to spend this day with us. "
