Real Wedding: The Castle At Skylands Manor

"About eight months after we began dating, Scott suggested we go to El Cid’s where we had our first date. In the car ride to dinner, it was pouring rain and there was severe lightning. I repeatedly suggested to Scott that we go back home, but he wouldn’t hear of it.
"Within minutes of ordering cocktails, a nicely dressed young man walked up to our table and handed me a dozen long stem red roses. Scott got down on one knee and proposed. Above us in the balcony were our families and friends, clapping and videotaping the entire event!
"Immediately after our engagement, we began planning for the wedding. The Skylands Castle was our first choice. The whimsical, Old World feeling of the castle and its gardens is absolutely beautiful. Linda Pergola, the catering director at The Skylands Castle, and her team, were amazing from start to finish. She always made herself available for us.

"On our wedding day we had the castle all to ourselves. Linda provided us with a bridal suite for the whole day. Our wedding party was able to go to the suite whenever they needed a break.

"The food was equally wonderful. Our cocktail hour was set up in three rooms, the Library, Great Room, and Breakfast Room. It included stations for smoked fish and caviar, grilling, and crépes.
"Our reception was held in the ballroom and looked gorgeous. During dinner we enjoyed filet mignon served in a deep port wine reduction sauce, Chilean sea bass served with a white wine herb créme sauce, and chicken francese, sautéed in a light lemon sauce.

"Our desserts were unreal. We loved the mini-cheesecakes and each table got a tray of assorted desserts. Our four-tiered wedding cake had the most delicious cannoli filling.

"On our wedding night, Scott and I forgot to take our wedding cake home. Linda offered to have a new top made and sent to us on our one year anniversary!
"Everything about our wedding day was amazing. The professionalism of the staff at Skylands Castle was all we dreamed of!"
