At a waterfront restaurant in New York, Russ and I were both enjoying dinner and drinks with friends, and after exchanging looks back and forth all night, Russ finally introduced himself. I am a speech-language pathologist and Russ is the owner and operator of a construction excavating company. A few days later, we met for dinner and started to get to know each other. Our real first date was a few weeks later when he took me to The Bronx Zoo followed by a romantic dinner.
For my birthday a year and a half later, our families were going to dinner together. Russ was strategically late picking me up, so our families went ahead without us and he could put his plan into action. When Russ arrived, I rushed him along to get to the restaurant, but before I knew it, he read me a love poem we had came across months prior, got down on one knee, and asked me to marry him!
Lucky for us, my father, Tommy Spinelli, began working at The Falkirk Estate as the director of catering shortly after we got engaged and were looking for a venue. The beautiful estate sits on a golf course with a stunning outdoor patio, a waterfall, and several gazebos. I always dreamed of a fall wedding and I knew the grounds would look picture-perfect as the October leaves turned. My father and all of the staff truly outdid themselves helping us plan and catering to us on that day.
We were married by Pastor Gregg Johnson under a flower-filled gazebo on Falkirk’s grounds. My father set up several surprises for me throughout the day. The first was him and I showing up to the ceremony in a helicopter! It blew our guests away.
Our cocktail hour was held both inside and outside. There was every type of food you could imagine! We had a little bit of everything, ranging from a seafood raw bar with jumbo shrimp and stone crab claws to a NY deli station serving items like hot dogs and Dr. Brown’s soda to an elegant carving station serving rack of lamb and duck breast.
Our ballroom was decorated lavishly. We had different variations of creams, taupes, browns, and golds throughout the room. Our centerpieces of tall orchids and hydrangeas were lit from the bottom of the vases to illuminate each one. For dinner, we offered a choice of chateaubriand in a red wine demi-glace, baked Atlantic salmon fillet in a French dill béchamel sauce, or chicken stuffed with sautéed spinach and Asiago cheese. There were also vegetarian, vegan, and gluten-free options available upon request.
After dinner, my father surprised me again with a firework show to light up the night sky. We ate, drank, and danced the night away! We had the downstairs transformed into a lounge for more eating, drinking, and dancing at our after-party, and my father’s last surprise of the night. This time it was for Russ — a cigar bar!
Thank you to everyone at Falkirk for making our wedding so special, especially my father — you made your little girl’s dreams come true! Thank you to our wonderful bridal party, families, and friends who were there to support us, not only on our wedding day, but every day. We love you. And most importantly, thank you to my sweet husband. I love you with all my heart Russell!
