When Matt and I were teenagers, we chatted on AIM for a few weeks before he asked me on a group date to a movie theatre in our hometown. We met outside before the movie and have been together ever since. Now, years later, I am a school counselor and he is a banking associate. One day in our home together, he gave me a photo book with pictures from all our special memories together, starting from high school all the way up to recent vacations. When I reached the last page entitled “The Proposal,” Matt got down on one knee and asked me to spend the rest of our lives together!
My prom was hosted at Hilton Pearl River and Matt also spent a summer in college working there as a banquet waiter. Not only did the venue have special meaning to us, but the staff treated us like family. Gerry Burns, the director of catering, Derek Rubino, the maître d’, Jacqueline Rochford, my bridal attendant, and the rest of the staff went above and beyond to take care of us every step of the way. I knew they had every detail covered to ensure perfection.
The morning of our wedding, Hilton Pearl River made sure we were comfortable and our bridal and groomsmen suites were stocked with coffee and a large breakfast spread. We had custom sunglasses made for our guests when they entered our ceremony on the back lawn. We exchanged our vows underneath the chuppah, which was made of birch and covered with hydrangeas and roses.
Our guests are still raving about the variety of cuisines at our cocktail hour. The mixology bar was a huge hit. Our passed hors d’oeuvres included Peking duck rolls, scallops wrapped in bacon, edamame dumplings, and more. We had all types of food stations like a sushi and caviar bars, an Asian station with Szechuan beef and Thai chicken, an Italian station with classics like lobster ravioli and penne alla vodka, a rack of lamb carving station, and a slider bar.
The ballroom décor was simple and elegant. We had high centerpieces filled with pink and champagne colored flowers. To complement the centerpieces, the candles and lights created soft hues of purple, pink, and gold.
We danced the night away, thanks to our amazing band! We started dinner with a seared tuna dish and a side salad and then lemon sorbet on a frozen spoon. For the main course, guests were offered filet mignon with bordelaise sauce, miso-glazed salmon, or French cut chicken breast in a Madeira sauce. In addition, they also served a large basket of truffle and sweet potato French fries. For dessert, we offered our fabulous wedding cake and a dessert sampler of cheese cake with berries, apple torte, and chocolate operate torte with whipped cream.
As we crowded together for the last song of the night, guests were served milk and cookie shots, mini ice cream cones, chocolate-dipped Rice Krispy pops, and more, right on the dance floor!
We cannot thank Gerry, Derek, Jacqueline, and the rest of the Hilton Pearl River staff enough for making everything stress-free and perfect for us. Thank you to all our vendors for making our day incredible. Thank you to all our friends and family for celebrating our special day with us!
