Ice Cream Truck: The Sweet Ice Queen
Although Jonathan and I had many terrible past dates on match.com, after just a few emails back and forth, we decided to meet. He works in automotive repair and I am a teacher. We met at Sunset Grill in Lincoln Park, NJ and I could quickly tell this would not be our only date.
Two and a half years later, we went on a vacation to Puerto Rico. One day on the beach, Jonathan asked me to take a photo by the water. A friendly stranger put the phone on video mode and captured Jonathan getting down on one knee and proposing!
From the moment I stepped onto the property of Birchwood Manor, I knew I wanted to get married there. I was in awe of the gorgeous gardens and extraordinary fountains. It was the perfect backdrop for our wedding photos. Once we met Michael Marino III, the banquet manager, it was a done deal. He felt like a friend and he was so accommodating and helpful. Michael took the time to go over every important detail of our day and put my mind at ease every step of the way.
We were married outside on the East Lawn under the gorgeous Pergola, which was perfect for our ceremonial site. Cocktail hour was held in the Jefferson Ballroom, a room fit for royalty! Our guests could not believe the magnificent spread and the artistic, inviting food presentation. The chefs truly outdid themselves. We had a large heart-shaped ice sculpture with two love birds inside. We had butler-passed hors d’oeuvres and chafing dishes such as cavatelli and broccoli, bacon-wrapped sweet-chili chicken, fried calamari, and more. Our two favorite food stations were the chef’s carving station, with teriyaki flank steak and roast pork loin with apricot-whole grain mustard and the wok stir fry station with sautéed meats and vegetables as well as classics like fried rice and fortune cookies.
Dimly lit chandeliers and glowing candles created an elegant and romantic setting in the Grand Ballroom. Our centerpieces gave an English garden feel, with vibrant colors of hot pink supernova roses, Pink Floyd spray roses, and electric blue delphiniums. The ballroom gave us more than enough room for our 225 guests, dining tables, photo booth, and colossal dance floor, which was packed all night long thanks to our DJ Phillip!
Our friends and family are still talking about the sensational staff and delicious food. We started dinner with a mesclun salad with balsamic vinaigrette followed by an intermezzo of raspberry sorbet. For the main course, guests could choose prime ribs of beef au jus, chicken francese, or cornmeal-encrusted tilapia with peach-mango salsa, each accompanied with a vegetable bouquetierre. For dessert, we had our wedding cake with strawberry vanilla custard filling. We also served cups of flavored ice creams, chocolate-covered strawberries, and French and Italian pastries. At the end of the night, Lisa, in her pink ice cream truck, served ice-cream, coffee, churros, and hot dogs.
Thank you to our friends and family for celebrating our special day with us. Thank you to Michael and the staff at Birchwood Manor for making our day absolutely flawless. I am certain we will be back at Birchwood Manor for future celebrations!
