Modern Rustic Ambiance
Karen: While attending Mount Saint Mary for graduate school, I worked as a graduate assistant with Richard’s sister Jackie. I am a special education teacher and Richard is a police officer. Jackie, along with another coworker, thought Richard and I would be a good fit, so she set us up, and Richard and I started talking on the phone. About a week later, we decided to meet in person for dinner. We clicked right away.
About two years later, Richard took me to Rockefeller Center to go ice skating. As the rink was clearing at the end of our skating session, Richard arranged for the staff to close the gate so it was just us on the rink. Our song came on and he pulled me to the middle of the rink and proposed!
Richard: We looked at a bunch of wedding venues, but we chose Falkirk because we loved the friendly staff and the venue’s clean, modern look. The all-marble bar had the Italian feel I wanted and Karen loved the rustic barn outside. Tommy Spinelli, general manager and director of catering, and Karen Corson, event coordinator, guided us through the whole process. They answered all our questions and left us with nothing to worry about. Michael Kubala, our maître d’, catered to our every need the night of the wedding. He made sure our drinks were always full, that we got enough to eat, and kept us up-to-date with the next steps of the night.
Karen: Our ceremony was in Mount Saint Mary’s chapel, where we honored our families in special ways. Richard’s grandfather passed away right before we got engaged and Richard wore his grandfather’s shoes for our wedding. I included the lace from my grandmother’s wedding dress, which my mother also wore at her wedding, in my bouquet and in the votives lining the aisle.
Richard: At our cocktail hour, we had several butler-passed hors d’oeuvres, including spinach and feta spanakopita, prosciutto wrapped in honeydew, coconut shrimp, and more. We also had a Mexican station with chicken and pork fajitas, a “Peter Luger” steak station with New York strip loin, and an Italian Sunday Dinner station with several types of pastas and eggplant rollatini.
Karen: We wanted our ballroom to have a timeless romantic ambiance. The room had amber uplighting and the tables had champagne colored linens. Our floral arrangements were a mix of high and low gold vases, filled with crème, blush, and purple flowers, and each had tea lights hanging from the base. The lace-covered votives from the ceremony were also placed all over the ballroom, the windowsills, and the fireplace. Our DJ played a wide assortment of music for all age groups. My favorite movie growing up was Grease so we also incorporated a Grease playlist into the music.
Richard: Dinner started with a fresh mozzarella and tomato salad. For the main course, guests could choose between chateaubriand in a red wine demi-glace, Florida red snapper, or French-cut chicken stuffed with spinach and Asiago cheese. Tommy first introduced us to the red snapper at our tasting event and it was an amazing choice. Our three-tier wedding cake had layers of cannoli, espresso and vanilla cakes and our florist did an incredible display of orchids that cascaded down the cake. I am a huge dessert fan, so we also did two big chocolate fountains with all sorts of items to dip in, like fruit, cookies, and more.
Karen & Richard: Thank you to our parents, our siblings, and our family and friends for their love and support. A special shout out to Karen’s mom and dad for making such an amazing day possible.
