John and I first met online and eventually went for drinks at a Spanish wine bar in the Upper East Side, not far from my apartment. We discovered we are both in the health industry; I am a registered dietitian and John is the director of a global healthcare strategy company. There was instant chemistry and I knew there was something more than just a first date with him!
A year and a half later, John planned a vacation for us in Paris and Corsica to celebrate me completing my dietetic internship. After a romantic day touring the champagne region near Reims, we returned to our hotel in Paris. We began talking about our dreams for the future, and as if granting my wishes, John got down on one knee, pulled out a beautiful engagement ring, and said, “I want to make your dreams come true!” We left for Corsica the next morning, continuing the celebration.
We wanted an intimate wedding venue that would be close enough to NYC for our guests to get to easily, but also a place that out-of-town guests could stay comfortably. We searched for “Castles in New York” online and knew instantly that Castle Hotel & Spa had everything we wanted. It was breathtaking. We set up an appointment with Nicole Worflar, the private event sales manager, who was incredible to work with. She was so helpful to me and John, and everyone involved, including my two sisters who came in with more questions than I did! Working with Nicole was like having a personal wedding planner.
Our officiant got to know us throughout the planning process and gave a meaningful and emotional ceremony. We opted for a bass player and guitarist for the ceremony and cocktail hour, and a DJ for our reception, all of whom our guests loved.
Photos of our families were placed on the tables in the cocktail hour room. The food stations were in the center of the room, including an Artisanal cheese display, a steamed mussels station, a grilled vegetables station, and more. There were also several butlered hors d'oeuvres. Some of our favorites were the coconut shrimp, the beef and vegetarian sliders, and the bacon-wrapped short ribs. The food was to die for!
We stood on the balcony overlooking our guests in the ballroom, like a scene from a fairytale, as we were introduced as Mr. and Mrs. Singer! The ballroom’s decorative glass windows and high ceilings allowed for a simple décor. We had white linens paired with low centerpieces of orange, yellow, and red spring flowers.
Our sit-down dinner began with an heirloom tomato and mozzarella salad as the first course. The second course was a delectable pappardelle and mushroom dish. Our third and main course options were a choice of striped bass in a tomato white bean fondue or filet mignon with potato and vegetables.
To add a personal touch, I made vegan gluten free coconut truffles for our wedding favors. Guests are still asking for the recipe. I was so impressed by how organized and professional our DJ was. He was so animated and fun and they rocked the house!
Thank you to our families for all their love and support. We were happily overwhelmed by how much my sisters and cousins went above and beyond to help. Thanks to Nicole at The Castle Hotel & Spa for being by my side every step of the way. And thank you to all my vendors, especially my photographer and hair stylist, who both did truly amazing work!
