“Unbridled Romance”

I moved to CT in 2013 for a job opportunity and ecstatically met the love of my life. Dan and I met online and have been together ever since. He planned a trip out west to Utah where we travelled to five national parks and at Arches National Park, Dan had the unbelievable idea of proposing in the middle of the desert. It was a dream to have my future husband, my rock, ask me to spend my life with him, amongst the rocks!

My parents researched a ton and happily discovered Park Château. They were amazed by the operations and the beauty of the venue. Planning a wedding during a pandemic could be difficult, but we couldn’t have asked for a better experience.

We fell in love with Park Château. Dan works in architecture and as soon as we saw their onsite chapel we were blown away. The Château Grande Hotel is beautiful, modern, and convenient. It was great we could have our guests stay the night.

You don’t need a wedding planner because Park Château orchestrates everything. The maître d’, Joe Sanseverino, was absolutely the best we’ve ever seen and more than we could ever have hoped for. The general manager, Tom Casella, and Devin Hope, the wedding coordinator, were outstanding and flawlessly facilitated the entire planning process. Gemma and Gabby, my bridal attendants, were my shadow the entire day. The whole staff is just incredible. Dan liked the fact that even if we casually mentioned something in passing, they remembered it and incorporated it. Their attention to detail is incredible.

We had our ceremony in the gorgeous chapel by the gardens. As I came down the aisle, the cherry blossoms were all you could see in the huge gorgeous windows. It was surreal. The highlight of the day was having Brooklyn Duo perform the ceremony and cocktail hour music. It was magical!

Some of our cocktail hour favorites were fresh mozzarella stuffed mushrooms, coconut shrimp with apricot sauce, and maple-glazed scallops wrapped in bacon. We also had six chafing stations, from filet tips with au poivre sauce to French mussels and roasted duckling in a Mandarin orange sauce. We had seven chef stations, including a Jersey boardwalk, a steakhouse station, and a pasta station. All the hors d’oeuvres were delicious. A highlight was the raw seafood bar with scallops, shrimp cocktail, oysters, and other favorites.

Their beautiful ballroom has a huge dance floor plus beautiful chandeliers. We selected a simple, elegant décor with pure white orchids throughout the room and the Park Château staff took care of everything.

For dinner, we asked the executive chef if it was possible to tweak things, and the response was always, “Absolutely.” They were happy to accommodate even our slight change for the sauce on the Chilean sea bass. We also had chateaubriand in a cabernet sauce, French breast of chicken with a fig and cognac demi-glaze, and eggplant Napoleon.

We selected our cake from Calandra’s Bakery. Even with our 11am wedding, they baked it that morning! It was a classic white fondant with fresh handmade sugar-orchids. Dan's parents hosted the rehearsal dinner at Orchard Park by David Burke, the restaurant in Château Grande Hotel. We closed the weekend with a delicious farewell brunch.

We were blessed to have found Park Château. Our deepest appreciation to Tom Casella. As for my dress, Sareh Nouri met with me and helped pick my dress and veil. Kim Major, from A Little Something White bridal shop, was an asset in helping me select my gown. My childhood friend, Lauren, skillfully provided the calligraphy for our welcome sign, place cards, and table markers. Special thanks to Dr. Kush Sidhu for officiating our ceremony. We also want to thank our families for their love and support.
