We met at my friend’s graduation party in 2012. Our first date was seeing the film “Ted” at the movies. Kyle proposed in front of our entire family on the beach in Wildwood, which is our favorite vacation spot.
As we researched wedding venues, we saw that SkyView Golf Club was affordable, and we fell in love with its gorgeous views of the mountains. Hildegard Power, banquet manager, was amazing at keeping everything organized.
Our best friend Anthony married us, even though we were already legally married the year before (thanks Covid), which was short and sweet.
As our guests gathered for cocktail hour, they were greeted by an elegant champagne display with Verdi champagne, strawberries, and hot apple cider. Passed hors d’oeuvres included sundried tomato quiche, short rib arancini with garlic aioli, buffalo chicken spring rolls, sesame-crusted tuna, teriyaki chicken skewers, and blackened shrimp skewers with lime crema.
The food at our cocktail hour was amazing and Hildegard always made sure Kyle and I had enough food to eat! SkyView also offered a special “Farm to Table” presentation with deluxe antipasto including prosciutto de parma, capicola, marinated artichokes, and grilled vegetables, plus a smoked salmon platter.
Our chafing dishes were also delicious, from the teriyaki beef and vegetable stir-fry with cashews, pineapple, and bamboo shoots to eggplant rollatini and fried calamari plus chili lime marinated flank steak. Everything at the cocktail hour was delicious, but the coconut shrimp was especially amazing and the slider station was awesome!!
The ballroom at SkyView is rustic and classic, so for our florals, we had succulents and white roses. Dinner started with Caesar salad, and for entrées, guests were offered a duet pairing of chateaubriand with Bordelaise sauce and chicken française, each accompanied by bouquetière of butter-poached baby carrots and haricot verts plus lemon and rosemary roasted Yukon gold potatoes. For dessert, guests were served a slice of our wedding cake, with vanilla buttercream, strawberries, and crushed Oreos. They were also served vanilla ice cream in a waffle cup plus chocolate-covered strawberries.
Thank you so much to all our vendors, to Hildegard and everyone else at SkyView, and to our friends and family, who were so helpful and supportive. Our day was amazing!
